This Carrot, Sweetcorn, And Chickpea Salad Is Delicious!

It’s often on our menu! The combination of sweetcorn, carrots, and chickpeas, makes a wonderful salad!

By the way, it’s super easy to make and goes really nicely with almost anything. The best part about this salad is that my hubby, who has Celiac disease, can safely eat it and he loves it.

So if you’re a gluten-free-er this is another great recipe to add variety to what can seem a very limited and boring menu!

(I’m not a doctor and ingredients will vary with brands so as always if you’re a celiac sufferer CHECK THE INGREDIENTS on your can of chickpeas and your bag of corn!

*There’s a secret that makes this salad so full of flavor and more-ish!*

And it’s super simple! Paying attention?

I lightly fry (separately to each other) the chickpeas and the sweet corn.

This brings out the flavor of both and the reason I do it separately is to keep the flavors from mixing so that with every bite of salad there is a delicious medley of three different flavors.

Cool fresh carrot, warm buttery sweetcorn, and then the smooth creaminess of the chickpeas. SO so good. Just saying.

Carrot, Sweetcorn, & Chickpea Salad

A super easy and divine salad! The three ingredients complement each other perfectly and will leave your mouth watering for the next time you make it! Enjoy!

Ingredients

  • 2 cups grated Carrots

  • 1.5 cups Sweetcorn

  • 1 can Chickpeas

Directions

  • Lightly fry chickpeas in 1tbs olive oil, 1/2 tsp of braai and grill spice, until they begin to catch. Remove and set aside to cool.
  • Lightly fry sweetcorn in 1/2 tbs mixed herbs for 5 minutes whilst stirring. Set aside to cool.
  • Wash, peel, and grate the carrots.
  • Combine and enjoy!

Notes

  • Be sure your spices don’t contain gluten as an ingredient or an allergen. And yes, if you used any, you also need to check your salt and pepper!

What To Serve It With

As I said, it goes well with most things. However, if you’d like some ideas, try it with roast chicken, grilled steak or chops, and even other salads. It’s been yum with every dish we’ve served it with.
