I make them fairly often. And because I’m a huge fan of bulk cooking I make extra and freeze the batter I don’t use for next time.

So when you do decide to make these amazing cinnamon pancakes for breakfast double up on the recipe and freeze the extra batter!

Just make sure you let it defrost properly before you use it. It’s that easy! Next time you have a craving for lemony, sugary, cinnamony, pancakes the mixture is ready and waiting.

I take it out the freezer the night before and by morning I just heat the pan and get cooking.

So, an *awesome* tip, I actually add the cinnamon to the mixture before cooking. It works so well! We like slightly more cinnamon so I add more than I mentioned in the recipe. Just experiment and you’ll find the perfect amount for you.

Also, the longer the batter sits the more milk it’ll need. So don’t worry if you find that you need to add a bit more.

These light and delicious cinnamon pancakes are a wonderful breakfast option. Sprinkle with sugar and lemon or any topping of your choice! Don’t forget to freeze extra batter for next time!

Ingredients

  • 1 cup Gluten-Free Plain/Cake Flour (Not gluten-free? Use 1 cup normal flour instead)

  • 1 & 2/3 cups Milk

  • 2 Tbsp Refined Sugar

  • 1 tsp Vanilla Essence

  • 2 tsp Cinnamon

  • 1 Egg

  • 1/2 tsp Salt

Directions

  • Combine all ingredients and mix well.
  • Use a 1/3 cup measure to make the perfect size pancake.
  • Fry without oil in a non-stick pan until golden.
  • Sprinkle sugar and lemon juice on, roll up, and serve!
