Ok, I’m being dramatic but we needed to find a way to manage our craving for comfort food while avoiding gluten. Craving comfort food is a thing! (Hats off to those incredible people who seem completely unaffected by the power of food – I am not one!) So finding ways to curb the cravings is a little tough when you’re trying to be healthy and every fiber of your rebellious self-indulgent self is screaming BRING ON THE LASAGNA!
There are ways to be healthy and get that all to sought after comfort food fix. Beef and Butternut Squash Bake is one of them. It’s all of the comforts and checks the health boxes too. The savory mince brings that delicious meaty flavor and combined with the smoothness of mashed butternut, topped with crispy melted cheese, it’s the perfect combo of health and comfort.

How to make Beef and Butternut Bake
Step 1: First, make savory mince following our delicious beef mince recipe. The mince recipe only calls for a few ingredients, coriander, garlic, salt, olive oil, beef mince, tomato sauce, mayonnaise, and water. It’s full of flavor and is a great addition to many different meals.
Step 2: Prepare your butternut, wash, peel, chop, and boil, until cooked. Drain the excess water, then mash your butternut. I don’t usually add anything to it but you can add some salt and butter for a richer flavor.
Step 3: Layer the mince and butternut making sure to end with a layer of mince on the top. Next, spread shredded cheese over and pop it in the oven. Let the cheese melt and turn golden. Once it does, your delicious beef and butternut squash bake is ready to serve!

2 large Butternuts
1 portion precooked Savory Mince
Cheese of your choice
- Peel and chop the butternut and then boil until soft.
- Drain the water and mash.
- Layer the mince and butternut ending with a layer of butternut on the top.
- Next, sprinkle shredded cheese over and bake until the cheese is golden.
